Orange Codfish
2 Large egg whites
2 tbsp Frozen concentrated unsweetened orange juice, thawed
2 tbsp Low-sodium soy sauce
1/2 cup Fine dry bread crumbs
1 tsp Parsley flakes
1/2 tsp Seasoned salt
1/2 tsp lemon pepper
1 lb Fresh (or frozen, thawed) cod fillets ( can sub with any fish you like)
1 tbsp Canola oil
1 tsp Lemon juice
Beat egg whites, orange juice and soy sauce with fork in shallow bowl. Set aside.
Combine next 4 ingredients on sheet of waxed paper.
Dip cod fillets into egg mixture. Coat completely in crumb mixture. Lay in single layer in greased shallow baking dish. Whick canola oil and lemon juice together in small dish. Drizzle over fish fillets. Bake in 450 F oven for 15 to 10 minutes until fish flakes easily.
