Strawberry Custard Pie

 I was told it is also very good with fresh or frozen blackberries or blueberries.  I think the next one I make I'll try some fresh ripe or frozen peaches.

Strawberry Custard Pie

Ingredients
1 unbaked 9 inch pie shell, deepdish
2 C. fresh strawberries
4 eggs
2/3 C. splenda
1 & 1/3 C. Hoods calorie countdown milk
1tsp. vanilla

Directions
Sprinkle cleaned strawberries in bottom of pie shell.  Mix beaten eggs,splenda, milk & vanilla together and pour over strawberries. 
Bake at 400 degrees until custard tests done with a knife comming clean when stuck halfway between the rim and the middle.
In my oven it took 30-35 min.  Keep an eye on it after 30 minutes as it can overbrown quickly.  
May be served warm or chilled,  ( I like it ice cold)

All three of my kids were home this weekend (from college and military)--I made tuna melts (I just ate the tuna) and the peach custard pie--they all loved it and wondered why I didn't make 2--they all wanted left overs for tomorrow.  So it was a big success.  Thanks.  Helga

I so love strawberries!  I have like 4 per day with my "nectar" protein drink....  I'll give this thing a try in a few days!

I never heard of Hood's countdown milk. Can you tell me where to buy it? Will soy milk work?

Wal-Marts & Kroger's both carry the Hoods.  It is cheaper at Wal-marts.  They have it in white & choclate.  It comes in half gallon cartons.  It is low in carbs & has 8gr of protein in 8oz.  I use it in my protein drinks.  My grandson loves to drink the choc.
You could use reg. milk or half&half, there would just be a little more carbs in it.  I don't think it would make any differance in the pie.

I got this in the oven as I'm typing I sure hope it turns out.  I don't use sweetners but I did use vanila flavored soymilk and half and half with a 1/2 cup sugar and a squeeze of honey.  I am using fresh strawberries.  I just got peaches from the farmers market so if this tastes good I may try it again with peaches.  I hope I can stand to wait till I can chill it to eat it.  Thanks for the recipe and you guys keep them coming. We are using and reading.
