need zucchini bread recipe

well here is the zucchini bread recipe I have:

Low Sugar Zuchini Bread

2 c splenda
1 cup cinnamon applesauce
2 c shredded zucchini (raw and unpeeled)
1 tsp vanilla
1 c chopped walnuts
3 eggs
3 c flour
1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp cloves

Beat Sugar, eggs, applesauce, zucchini, nuts and vanilla until blended.
Sift together all other ingredients and slowly add to wet mixture.  Add a little water if batter is too dry.
Pour into 2 greased loaf pans
Bake at 350 for 25 minutes.  Do NOT overcook.  Ready when toothpick comes out clean.
Each slice= 93 calories

Sounds great.  I wonder if you could put some unflavored or vanilla protein powder in to get some protein worked in, too.  I'm not much of a cook, so if you have any idea if I would reduce the flour or what I'd do to add a couple scoops of protein powder, could you let me know?  I try to avoid any foods that don't have protein, but I LOVE zucchini bread!  MMM, especially with chocolate chips in it, too.  Might have to break down and spend the big bucks to get some sf chips.

I think that would work fine--might add flavor too.  BTW you could sub soy flour for 1/2 of regular flour and it would be ok.  Did you know there are chocolate chips that are sugar free our on the web.  A litle expensive.

I'd try substituting 1/2 the flour with ground flaxseed.  I use my Magic Bullet to grind mine.  More fiber and protein, not to mention omega-3 fat. :-)

Another stellar recipie !!  Man that sounds good, But.. I dont know how my Sleeve would handle the flour?  And L.B.'s Though of adding the protein powder should work great, Id prolly try the unflavored powder, -vs- the vanilla..

Cook Time: 55 minutes

Ingredients:

  • 1 cup vegetable oil
  • 2 cup sugar (or Splenda)
  • 3 eggs
  • 2 tsp. vanilla
  • 2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 2 tsp. cinnamon
  • 2 cups grated zucchini (leave skins on)
  • 1 cup walnuts
  • 1 cup chocolate chips
  • 1/4-1/2 tsp salt
  • 1 tsp nutmeg

Preparation:

Mix oil and sugar. Add eggs, one at a time beating well after each addition; blend in vanilla. In a separate bowl, sift together the flour, baking powder, cinnamon, salt, nutmeg, and baking soda. Add sifted dry ingredients to first mixture; alternating with grated zucchini. Fold in chopped nuts and chocolate chips. (Batter will be a bit thin.)
Pour into greased and floured 13x9x2-inch pan. Bake at 350° for 55 minutes.

Here is a recipe I tried a while back and my DH and I LOVED it !!! I added the last three ingredients myself by combining two recipes.  Hope you enjoy whichever you decided to make !!
