LOW Carb: "Good Morning Sunshine" Baked Omelette ***Kills your food cravings!

I have a friend who works at "Hash House A Go-Go" in vegas, who always demands that I fix this for her.  She lost 88 pounds on a hardcore low-carb diet and I called her tonight to ask if he's kept it off....she's lost even more weight! WOW...

This is more than just a meal for breakfast.....  you can chop it up into crumbly little bits and sprinkle over a salad for a great lunch as well!  This will kill those cravings that most people get abou an hour after breakfast and give you enough nutrition and goodness that can prolong your need to eat if you know it's going to be a tough day!

"Goodmorning Sunshine"    Baked Omelette

Ingredient list:

2 tbsp Butter
1/4 small Onion, minced into tiny bits
1 medium Tomato, diced
1 cup Mushroom, diced
1/4 lb sausage (like jimmy dean patty style sausage)
3/4 cup Monterey jack cheese, cubed
1/2 cup Colby or Cheddar cheese, shredded
6 slices of  Canadian Bacon
4 basil leaves
8 medium Eggs
3 tbsp Cream


Spices:
1 tsp garlic powder, ¼ tsp sage (unless you can get a small amount of fresh sage), ¼ tsp cayenne, salt and pepper to taste.

Prep:

Brown the sausage- set aside

To a medium bowl, add all of the spices, eggs and cream.
 

Beat the eggs until incorporated with the spices until light in texture.

Saute the onions, mushrooms, tomatoes and butter until soft, yet still firm.

In a casserole dish, butter the sides and add the sausage, Canadian bacon,  and the vegetables and mix together.

Pour in the eggs, making sure to stir gently with a spoon.

Tear the basil leaves into small bits sprinkle and stir once more gently.

Drop the Monterey jack cubes into the mixture as evenly as possible, then coat the entire pan evenly with the colby or cheddar cheese.

Bake at 350 for 30 minutes. 

The cheese should be a little brown and the eggs should be firm and delicious! 

If the cheese isn’t brown, then put it under the broiler for a few minutes.

This sounds yummy, thanks for sharing...For myself, I will probably use lite butter, turkey sausage ( breakfast roll) and turkey bacon...anything with high fat content doesnt like me very well...

that's the best part of my recipes....  I want people to change them to fit their particular need!  So change away!  As long as there are more options for you or your family, then I'm happy!  So glad you think it looks tasty!

 I've been off eggs for a while because I got tired of them.  This sounds really good.  Have any recipe's for the crockpot?  Or 5 ingredients or less?  You know I'm culinary challenged.  Thanks for all the great ideas!!

c, you're gonna make me break out my simple recipe book?  the recipes in there aren't good...  it's like hamburger patty, cooked..add salt, pepper, maybe chilli....cheese...there ya go hunny!  hehe...  I wish I had more simple ones.....  I do have a ton of crockpot recipes, but waiting for cooler weather to post those!

Could you put it all together and just cook it in the oven in the morning (especially on those busy work days)?  It really sounds good and something we would all like.

sure that wouldn't be a problem at all.  In fact, some people make it the night before...  I don't think i would do that, but hey....I'm a picky kinda guy....  just remember, you can chop up and eat with salad for more protein and great taste!

I made this last night but with extra Canadian Bacon because I didn't have sausage in the house and we LOVED it!!  My hubby had some with me, then later went back and made burritos out of some of the leftovers and loved those, too.  Next time I'm going to throw in some green chiles - we think those belong in almost any food!!  Awesome recipe!!!
