Need help with homemade icecream recipe

I am going to be making homemade icecream for a nursing home, plus myself...teehee...I need this to be low sugar, and low fat...Can anyone help me?  Everytime I ask someone on other forums they tell me to go to a certain persons website and look there...Well, everything shown there shows it using protein powder this and that...Thats not what I am wanting...Could someone please help me...Also my concern, years ago when my Daddy made it, he used eggs and never cooked them...Nowadays, there is a big concern with raw eggs and everyone getting sick...I was told to that its safe if you cook the eggs and milk together in a double boiler until it reaches 160 degrees, and then chill the mixture before adding other ingredients...Also, my dad used junket tablets...He would crush them up and mix with a little milk before adding to the mixture...I don't really know why he used them, or what their special need is for...Do people still use these nowadays...Any form of milk product needs to be low fat, and I am not sure what kind of canned milk and etc is available on the market...I sure could use some help, pleaseeeeeeeeeeeeeeee ??? I sure would appreciate it...Thanks so much to anyone *****plies...

P.S.  We are making this icecream in one of those old hand crank style freezers, so this way the residents can help crank up until it starts getting hard to crank...Then the rest of us volunteers, aids, will do the rest...

The first ice cream you described is a custard...that type is made with eggs and heated then cooled before processing.  The first site I went to for a search was recipezaar.com and found this one for you:   http://www.recipezaar.com/210831

As for a junket-containing recipe, they had this one which definitely is not diatetic

You could mess around with the last one to bring down the fat and sugar grams but I haven't ever eaten a junket ice cream and can't comment on how altering the ingredients would react with that product.  Anybody else?

If you find a recipe with eggs you can get liquid egg like egg beaters- its not really egg so its safe to use
