IM ALLOWED TUNA, CHICKEN ,TURKEY, WHOLE EGG, LOW FAT CHEESE, FISH NOT FRIED OR BREADED , AND I AM A TOTAL PICKY EATER ,( NOT THAT YA CAN TELL FROM MY SIZE) IF ANYONE CAN HELP WITH A LIL VARIETY IT WOULD BE GREATLY APPRECIATED, I DON'T DO ONIONS, TOMATOS, PEPPERS, LIVER, SEAFOOD, LIKE I SAID VERY PICKY EATER ........THANKS IN ADVANCE FOR YOUR HELP
Okay I will try and help here...Try taking the ingredients you do like and make a casserole out of them...Say for instance, take turkey or chicken, add an egg, some low fat cheese and make an omlette...I fix mine in a non stick skillet, with just a little vegetable spray...You can also add fresh mushrooms to this, chopped celery, water chestnuts, just for some extra crunch...
Another suggestion...Make a casserole using either the chicken or turkey, add some cream of mushroom or chicken soup, some low fat cheese, toss in some veggie such as celery, baby carrots, water chestnuts, cubed up potatoes, dab of skim milk to thin down...Then bake in oven on 350 - 400 until done...
If you like cottage cheese...take some low fat cottage cheese, mix in a small dish of sugar free kool whip, package of your favorite flavor of jello, and some no sugar added pineapple...
This makes a very yummy cheese ball / spread for on crackers...or can eat by itself...Take one can of lite fruit ****tail...Drain it...Then in a dish take a hand held potato masher and mash up the fruit....Then stir in and mix one small box of sugar free pudding...Then add 2 packs of lite cream cheese ( softened )...Chop up a cup of walnuts and spread out on a piece of foil...Then form the mixture into a ball , which will be a little sloppy, and roll it around in the walnuts...Some people just mix the walnuts in and doesnt mess with this part...Thats your choice...
I like to go to walmart and ask them to cut me a 1/2 inch slice of baked turkey breast or chicken...Then buy some turkey / chicken gravy packets ( which are no fat ) , add the water to them, and cook till thickened...Or you can buy the gravy in the jar...Pour gravy over the turkey / chicken breast and let simmer slowly in a skillet until nice and hot...Its good served over mashed potatoes...Or a slice of toasted bread...Or can eat it by itself, served with some steamed veggies of your choice...
How about some tuna salad...Boil up some eggs, and chop fine...add drained tuna...add a chopped apple for extra crunch and flavor...few diced water chestnuts...some diced up celery.. some lite miracle whip or mayo...I then put just a touch of mustard, a squirt or two of low fat ranch dressing ( optional )...You can also add a small handful of raisens...Serve over lettuce leaves, or with a slice of toasted bread, or non toasted...whichever you prefer...Can also add a few sprinkles of slithered almonds or sunflower seeds for extra protein...
I like to drain a few cans of tuna...add some chopped celery...an egg...dab of mustard...salt and pepper...few crushed up crackers...diced up fresh mushrooms...Form into patties, and brown in non stick skillet thats been sprayed...Sometimes I will brown mine into lite margarine...When done, I like to take some cream of mushroom or chicken soup, mix in a little skim milk to thin down, but not too think...pour over the patties in the skillet...Put lid on and allow to cook slowly for about 20 minutes...When done, top with some shredded low fat motz cheese, or your choice...Put lid on for just a few more minutes to allow cheese to melt...
How about make a meatloaf out of ground turkey? You can also make use turkey instead of the tuna in the above recipe...I would just make the patties thin so they would cook properly without drying out...
Perhaps you can make some barbecue using ground turkey...Just cook up the turkey, drain it well...Since you dont like onions, you might try using a dash of onion powder...add some ketchup, small dab of mustard, little shake or two of liquid smoke...chop up some celery real fine...I always add a little sprinkle or two of splenda to take away the tart taste of the ketchp...Might add some garlic powder...Salt and pepper to taste...Can be served with some low fat motz cheese, or your choice...
Well, I hope these ideas help in some way...Let me know if I can be of any further help...Tammy

Many people will walk in and out of your life, but only TRUE FRIENDS will leave footprints in your heart...And may that friendship have such a ONENESS that when one weeps the other will taste salt...Friends are like balloons ; once you let them go you can't get them back....So I'm going to tie you to my heart so I never lose you.
