Family meals
Any great ideas for some family recipies that are good for me too would be greatly appreciated. I am 4 year post-op and I think my family is getting tired of the same old stuff. And so am I.....LOL. Maybe some casseroles or variations that I can use chicken or other meats would be great.

I like to toss together casseroles such as : Slice up some yellow potatoes or whichever kind you like best...add some chopped celery, and onions...Add a few water chestnuts ( optional )...Open up 2 cans of cream of chicken ( or 1 chicken & 1 mushroom or celery soup)...Put soup in mixing bowl, add some skim milk to thin it down , but be careful so its not runny...Cube up some raw chicken breast tenderloins...Toss in some colby cheese, salt and pepper...Mix and pour over potatoes...sprinkle a little extra cheese on top, and bake at 350 or 400 whichever you want...depending on how fast you want it done...Sometimes instead of the potatoes I will add veggies such as cauliflower, broccoli and baby carrots...
I like to make meals in foil....Lay out a sheet of foil on a baking sheet...spray foil so foods wont stick...Put down a choice of meat such as chicken tenderloin strip/s , or lean pork chop, slab of ham, turkey sausage links...Top with sliced up onions, baby carrots, cauliflower, broccoli, chunks of potatoes...Can sprinkle with salt , pepper, garlic powder, onion powder, or any seasoning that you prefer...I sometimes put a few dabs of lite butter in mine just to help keep it moist...Then I lay another sheet of foil on top, fold the ended up tight...Bake at 350 until done...
