Eggplant recipes???

Make a dry ingredient batter of 1/3 C. almont flour or almond meal (Trader Joe's carries this), 1/3 C. parm. cheese, 1/4 t each of garlic powder and italian seasonings, salt and pepper to taste. Slice eggplant and dip in 1-2 eggs that are whisked well. Dip into dry ingredients and fry in canola oil till brown and crispy on both sides. Then put sauce over it and top with mozzarella cheese. Put in microwave oven for 1 min. till melted. I fried the eggplant and then made one portion at a time of the parmesan. It was very good!
