need something to take to my family reunion that I can eat
Hi Shawna I thank you for offering the recipe! I am just wanting something easy to fix that I can eat! You know a dessert or some kind of salad. It doesn't matter to me, really. I just don't like mushrooms, ancovies, or asparagus. SO anything that leaves those out of the dish is fine with me. How about just a couple of your favorites? Thanks for any recipe you might send!
A good dessert is as follows(I have seen other variations floating around, but this is my tried and true):
Delicious, Moist Cake..yummmm
Ingredients:
1 Reduced Sugar Yellow Cake Mix (available at onlinestore.smuckers.com)
1 Small Can Mandarin Oranges
1 Can Crushed Pineapple
1 Tub Sugar Free Cool Whip
3 Eggs
Directions:
Combine cake mix, eggs, undrained mandarin oranges and liquid from the crushed pineapple. Pour into pan and bake as directed on box. After the cake has cooled, mix the drained pineapple with the tub of cool whip and frost. Serves: 24 Calories: 130 Sugar: 10
My favorite recipe website is allrecipes.com. I like to look around on there as there are so many substitutions that we can make to "normal/full fat/full sugar" recipes without sacrificing taste. I will testify that mashed cauliflower is an excellent substitute for mashed potatoes, among many other odd sounding substitutes. Eggface(www.theworldaccordingtoeggface.com) and Neen(http://neensnotes.blogspot.com) also have excellent recipes. There are other blogs, but those 2 came to mind first.

Shawna sounds really good! How long does it take to get the reduced sugar cake mix from the onlinestore.smuckers.com? I need it by Friday! Make that tomorrow evening because I have to make it on Friday to take it on Saturday morning. Do you think I would be able to get one at Walmart? I can get the rest there. Some walmarts carry it, some don't. If you go to http://www.pillsburybaking.com/products/product_detail8.aspx and select product locator on the left, then cake, then scroll down to "moist supreme reduced sugar yellow cake" and enter your ZIP, you can see if it is sold locally. I haven't done the nutritional value on using a regular cake mix, but since it's being divided by 24, I imagine it would have minimal impact on sugar and calories.
