need something to take to my family reunion that I can eat
Could you all help me? I need a really good recipe to take to my family reunion at the end of the month. It needs to be something that I can eat! It really doesn't matter if it is like the main course stuff or dessert. I am not pickey! If you have a recipe that is good and easy that can be kept in a cooler then I am interested. Thank you for any recipe that you can give me that is without sugar! Thanks again!
I made black bean salsa for my family reunion last weekend
I used 2 cans of black beans rinsed
1 can of small red beans rinsed
1 med. tomatoe diced small
1 small purple onion
1 teaspoon minced garlic
1/2 teaspoon lime juice
1 Tablespoon cumin
chopped fresh cilantro to taste and mix
you can add corn too or low fat shredded cheese for extra protien boost and modify it to your taste and size of dish you need

Serve with a pile of cheese on top and a dollop of sour cream, diced tomatoes and avocados.
2 tablespoons olive oil (if using Soy crumbles instead of hamburger)
1 pound ground beef or turkey OR 1 pkg. Morningstar Crumbles
1 medium onion, chopped
One 16-ounce can chili beans, undrained
One 15-ounce can kidney beans, undrained
One 15-ounce can whole kernel corn OR 1 cup frozen corn, optional
1 can condensed tomato soup, undiluted
Two 14.5-ounce cans peeled and diced tomatoes (I puree them)
One 4.5-ounce can diced green chiles
1 small can sliced olives
One 1.25-ounce envelope taco seasoning
2 teaspoons chili powder OR to taste
2 teaspoons Splenda
In large saucepan saute meat and onions over medium heat until browned. Drain away any remaining fat as possible.
Add remaining ingredients; simmer uncovered for 2 to 3 hours, stirring occasionally. The longer it simmers the better it gets! Copyright © 2007 by Susan Maria Leach/Linda Farnsworth www.BariatricEating.com, HarperCollins Publishers Inc. all rights reserved.
I have tons of recipes if you narrow it down a bit. Do you want meal type things or snack? Shari's buffalo chicken dip is heaven sent otherwise, I can get out the recipe binder...lol
