recipe for ezekiel bread
anyone out there have a recipe for ezekiel bread that is tweeked low sugar? I love the bread and want to be able to make it in my bread machine. The recipe I found online calls for honey and I don't want to use that.

Bread Machine Ezekiel Bread Recipe 1 cup Water
1/4 cup Red Kidney Beans - (cooked and Drained)
1/4 cup Lentils - (cooked and drained)
1 1/2 tablespoons Olive Oil
1 1/2 tablespoons Honey
3/4 teaspoon Salt
2 cups Bread Flour
1/2 cup Barley Flour
1/2 cup Millet Flour
2 tablespoons vital gluten
1 1/2 teaspoons Yeast
Put all ingredients into the bread pan and push start.
Per serving (excluding unknown items): 1600 Calories; 26g Fat (15% calories from fat); 59g Protein; 283g Carbohydrate; 0mg Cholesterol; 1626mg Sodium Food Exchanges: 17 1/2 Starch/Bread; 2 Lean Meat; 4 Fat; 1 1/2 Other Carbohydrates
Note you could probably use the sugar free honey that Super Wal-Mart sells if the 1 1/2 T is too much.

Hi Alice, This recipe uses Splenda but it is not for the bread machine...if you're really good with your machine I'm sure you could figure out how to make it work. Anyhoo, the recipe looks good and you can change the serving sizes the recipe makes on this website.

What you can do since the honey is really used to make the bread rise and to add a little moisture is replace the honey with 2 teaspoons of Fruit Fresh and The honey does add flavor but that small amount divided among that whole loaf shouldnt really affect you too much but if you want to substitute this is what I would try.
The natural vitamin C in this along with the Vital Wheat Gluten will help the bread to rise.
Either recipe given on these posts here can be just made to the dough cycle in the bread machine and then you can knead the bread and bake oit in a bread pan in your oven after it raises if you want. Also to help the bread raise a little better add just a tiny bit 1/2 teaspoon of cider vinegar. This is especially good if you want to make bread WITHOUT salt.
Let me know if yopu try this as I have never eaten ezekiel bread. But I make reg bread tihs way for my husband all the time as he cant have sugars and also he cannot have salt.

Kim H. The recipe looks good but It is more for a Commercial kitchen as it calls for more than 19 Cups of Flours. It can be scaled down quite a bit.
I do know how to do that as I had to do that while I worked in Food services. That would certainly make a lot of Ezekiel bread.
