need a zucchini bread recipe

It's the season for everyone to give out this lovely veggie.  I no longer can eat it fried, so does anyone have a good SF recipe (that is easy) for zucchini bread/muffins?

I have found that splenda's baking sugar works perfectly with any recipe that calls for sugar.  The brown sugar splenda works too.  Try your favorite recipe using those substitutes.

I haven't used the splenda, however, I just put in half the amount of sugar.  You hardley miss it.

I take my regular recipe, replace the sugar with Splenda, instead of oil, I use applesauce, and I now use whole wheat flour.

Low Fat/Low Sugar Zuchini Bread

2 c splenda
1 cup cinnamon applesauce
2 c shredded zucchini (raw and unpeeled)
1 tsp vanilla
1 c chopped walnuts
3 eggs
3 c flour
1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp cloves

Beat Sugar, eggs, applesauce, zucchini, nuts and vanilla until blended.
Sift together all other ingredients and slowly add to wet mixture.  Add a little water if batter is too dry.
Pour into 2 greased loaf pans
Bake at 350 for 25 minutes.  Do NOT overcook.  Ready when toothpick comes out clean.
Each slice= 93 calories.

I use Paula Deen's recipe for Zuchinni Bread but instead of flour I do two cups of soy flour and one cup of whole wheat. I add in some Ghiradelli 100% baker's chocolate (no sugar) and some nuts. Also instead of oil I use apple sauce and lots and lots of cinnamon and nutmeg. I bring them into work and even non-dieters love it. You can get Paula's recipe from Food Network.com
