recipe needed for coconut shrimp....please!
I will admit that I have not yet made this recipe but I found it online (probably here on OH) and it looked good. If you make it, let us know how it turned out! Laurie
Caribbean Coconut Shrimp
Ingredients

Tbsp. olive oil |

Medium onion, minced |

Medium red bell pepper, diced |

Medium green bell pepper, diced |

Jalapeño peppers, seeded and minced* |

Cloves garlic, minced |

Medium tomato, diced |

Lb. fresh shrimp, peeled, deveined and tails removed |
3/4 |
Cup coconut milk |

Juice of 1 lime |
1/4 |
Cup minced parsley |
Directions
Heat oil in large skillet over medium heat. Add onion, peppers and garlic. Sauté about 4 minutes or until soft; add diced tomato, stirring to mix well.

*Use caution when handling hot peppers. Wear disposable gloves or wash hands thoroughly in hot, soapy water. |
