Dover Sole suggestions?

I am still on proteins only, meaning no sauces or anything fancy. Have 2 fresh filets of Dover Sole .. any suggestions?

Saute in a *little* butter, lemon juice and some white wine, about a tablespoon of each. I put a cover on the pan to keep it even more moist. I do it this way with any kind of fish, always comes out nice and moist.

Thanks Rich! How long do you think this would take? I am always so nervous about undercooking fish!

The worst danger is overcooking fish. Just coo****il meat turns white and flakes with a fork.
