The first recipe is low in fat and carbs, but higher in protein. The second is higher in fat, but you can use lower fat products. It is high in protein but still low in carbs. They are yummy!!   Sherry's Chinese Chicken This is so easy and so yummy. If you like Chinese veggies and chicken, you will love this. The easy thing about this is you can add as much or as little as you have on hand. It looks hard, but it is very easy....You are just cooking chicken, adding sauce then adding canned veggies....It's all about flavoring your chicken broth so that it makes the chicken have a great flavor. Your whole family can eat this. You can put it over rice for the family or use Lo Mein noodles for them. I just ate it plain and was great!   8 or so skinless, boneless chicken tenderloins   (4 oz are 24 grams protein) I actually used 15 tenderloins because I am taking some to family. 16 oz water may need to add more as it simmers if you want any broth Two chicken bullion cubes Garlic salt Salt and pepper as much as you would use Chop or quarter 1 med onion 1 or 2 chopped garlic cloves optional You can add chopped green peppers, chopped celery, more chopped onions...broccoli...what ever veggies you like.   If you want some broth to sip on add a little more water and re season. It probably wont need it as the chicken will be adding lots more flavor. When chicken is done...   Mix in a side bowl: 1 to 2 Tablespoons Kikoman (contains no fats, or carbs and actually has 2 grams of protein) 1 to 2 Tablespoons Soy Sauce  (0 on fats, carbs, protein) Not quite 1/4 t. Sesame Oil. Don't do more!! It is strong! (This actually has 14g. of Fat per T but you aren't using that much) I also added about 1 table spoon of cooking Sherry  1 T Wasabi paste( you get this in the Chinese food section of your Walmart.) This is like a horseradish so it is spicy...if you like that you can add 2 T to really be spicy. You don't even have to have it in it at all. I just like the little kick. Pour onto the chicken and broth and stir around Make sure you have at least 8 to 10 oz chicken broth left.   Add: 1 Can Cream of Chicken soup Stir until well mixed and creamy looking.... Let simmer down   When all is mixed and simmered a few min while stirring......add the following. 1 lg Can Chop Seuy Vegetables....drained well 1 can Bean Sprouts...drained well Water chestnuts...drained well and chop or buy chopped 1 Can mushrooms well drained Add this all to the pot and simmer until it thickens up.....   I think I checked and found that this whole recipe has only like 40 carbs or so...but it is divided up by the servings so it all depends on that as to how many you  can consume.                          Okie's Kicken Chicken Cheesecake 2nd Place Winner Made In Oklahoma Recipe Contest Serves 8   Pam Spray 1 16oz Package Cream Cheese softened 1/2 Cup Sour Cream 1 Pkg. Taco Seasoning 2 Eggs 5 corn tortilia's 1 Cup grated sharp cheddar cheese 2 Cups cooked chicken, chopped or cubed or shredded 1 Small 4.oz can chopped green chilies( do not drain) 1 T. Chopped Jalapeno Peppers (from a jar ) 1/2 Cup chopped green onions   Optional Garnish and topping 1/2 Cup Nacho flavored Dorito's crushed(totally optional) 1 Package Pre-packaged Guacamole Remaining 1/4 chopped green onions   Preheat oven to 350 degrees. Spray the bottom and sides of a 9 inch pan. I used a 9 inch spring form pan. Tear the corn tortilia's into pieces covering the bottom of the pan. Give the tortilia's a spray of Pam, to give a light coating.  Mix the softened cream cheese, 2 eggs, sour cream and package of taco seasoning until well blended and smooth.  Stir in 1/2 of the grated cheddar cheese reserving the remaining for the topping, add chicken, chopped green chilies, and jalapeno peppers.Only add 1/2  of the green onions. You are reserving the remaining for the garnish. Do not mix this step with the mixer. Stir until well blended. Pour mixture into greased pan   Bake for 45 to 50 min.   Mixture will not giggle when done. Remove cheesecake and while hot, sprinkle remaining cheddar cheese over the top to melt. Sprinkle remaining green onions over the top. Followed by desired garnishes. I serve ours with the Crushed Dorito's  and 1 to 2 T. Guacamole.   Let stand 15 min before cutting and serving.   The chips will soften if left on for a long length of time, so I recommend putting them on before serving, as with the Guacamole.   This one is very rich!!! You can use left over roast to it instead of the chicken or even left over pulled pork.

Sounds yummy but I have a question.  On the first recipe you say:  "Mix in a side bowl: 1 to 2 Tablespoons Kikoman (contains no fats, or carbs and actually has 2 grams of protein) 1 to 2 Tablespoons Soy Sauce  (0 on fats, carbs, protein)" what type of Kikoman sauce do you add?? Thanks.

Kikoman soy sauce is what I use...It has a totally different taste than like LaChoy. So I use both...I actually use both to marinate meat to grill too. If you have any more questions, feel free to ask. sherry
