I'm Addicted to this Cucumber Salad!

I bought this salad at a local store a couple weeks ago, and have been making it myself ever since and am positively addicted to it! (Three months ago if you told me I would be addicted to any salad vs. fast food and I would have been looking for the cameras!) Ingredients: 1 cucumber 1/4 - 1/2 a medium sized red onion (to your tastes) 2 small tomatoes or 1 large Handful of olives (kalamata or plain black, whatever you like) Balsamic vinegrette dressing (I use white) Feta cheese Peel the cucumber and then remove the seeds from the cucumber and tomotoes and cut everything into bite size pieces (except the onion, which I slice into thin slices). Toss in some feta to your tastes and then pour about 1/4 cup of vinegrette over the salad and mix. Viola!  Super easy, and it lasts forever in the fridge and the cucumbers don't get soggy. It's a perfect salad on a hot day and it is so easy on my tummy. I have seriously been eating this almost every day for a couple weeks.

HI just saw your recipe and I love cucmbers! do you put in olives and tomatoes or just one or the other? Also do you use just plain white vinegar? no matter which u use how much do you use? could you use any other chesse like goat cheese? Thanks Michelle

Hi there, Pre-surgery I never really cared one way or the other about cucumbers, but now, I can't get enough of them! For my salad I put in olives and tomotoes and I use a white balsamic vinegrette dressing. And yes, I would assume you could use any kind of crumbly cheese. I just like feta for the strong taste. You could leave out the tomotoes or olives if you don't like them. Hope you like it!

Oooh - I'm glad! I just got back from shopping and my crisper drawer is full to the brim with all the makings for it cause I ran out too.

thanks for this great recipe. I made it today for a BBQ (double batch) and it got wiped out. I have enough ingrediants for another. Yummy!
