I sure would love and appreciate a recipe for Corn Chowder if anyone happens to have one...Thank you

Many people will walk in and out of your life, but only TRUE FRIENDS will leave footprints in your heart...And may that friendship have such a ONENESS that when one weeps the other will taste salt...Friends are like balloons ; once you let them go you can't get them back....So I'm going to tie you to my heart so I never lose you.

I haven't had this since before surgery so I don't know how it is for post  WLS but here is the way I make it: 1/3 cup of butter (I use the I Can't Believe it's not butter spread) 6 potatoes cubed 1 can cream corn 1 can kernel corn, do not drain 1 qt 1/2 & 1/2 (fat free) (tall skinny carton) 1 diced yellow onion 3-5 slices bacon (optional) In a medium/large pot melt butter over medium heat add onion and bacon coo****il onions are clear and bacon is cooked to your liking.  Remove bacon from pot and crumble then return it to the pot.  While the onion and bacon are cooking dice potatoes (I peel 3 and leave skin on 3).  Add potatoes to onion and bacon then add enough water to just cover the potatoes increase heat to medium high and boil potatoes until they are fork soft but not so soft they fall apart.  Reduce heat.  Add 1/2 and 1/2, both cans of corn and cover.  Simmer for 20 minutes.  Season with salt and pepper to your taste (I just use pepper).  Enjoy!  Tastes even better after it sits overnight.

I'll do the same recipe except instead of adding the
2 types of corn, I'll add some diced raw fish and some thyme, for a fish chowder.

I do the same thing occasionally...I'm the only one in my family that eats fish though so it's rarely.

At a Restaurant at the Chatanooga Choo-Choo they make a Chocken Chorn chowder.  I have been wondering how do make a Corn chowder now I know and I will add "Chicken" sounds good. thanks for the idea and the recipe.  If you ever get a change come visit Chattanooga in Tennessee. They have great things to see and do, a great Aquarium, Trains, Childrens Discovery Museum, lots of museums, outlet malls, FREE trolly car service. Just a lot of things to do and at the holidays they have carriage rides and it is just so beautiful . Lookout Mountain has the Incline railroad if you like to ride straight up a clift on a train. There are a lot of old timey festivals. And dont forget the WORLD famous Fidllers Jamboree in Smithville TN. It is World Famous even Ricky Scaggs goes there, and many other famous fiddlers have appeared. See more about it at: www.smithvillejamboree.com SM

Can you tell I love TN and Chatanooga?  I would of never been able to do all this activity before i had my rny

Here in SC we call that chicken stew!  It's made just like the corn chowder recipe given but don't add the bacon.  Include a couple cans of chicken broth, some shredded chicken breast, and milk.  You can make it as thick or thin as you like.  This is one I DEFINITELY plan to make WLS friendly as soon as I feel like eating again!

Mmmmmmmm!  Got my fingers crossed for you getting some of it.  It'll be a while before I get to have any corn but I'll be looking forward to it!
