Blue Fish Recipes

Does anyone have any WLS recipes for blue fish?  My husband caught 12 fish over the weekend.  Not really sure how to cook them without all the butter.  Thanks Jennifer

Are they whole fish or fillets?
If they are fillets, try smoking them. Smoked bluefish is sooo good and sells for $19.99 a pound!
Or try baking the fillets with some fresh basil and lemon.
The smaller fillets I like dusted with flour and pan fried.
You can also broil the fillets with some lemon juice, that is good also. I've wrapped the fillets in foil with some lemon and thyme and placed them on the grill too.
For whole fish my grandmother and mother would stuff the cavity with a bread stuffing, tie with string and bake.
I think that is my favorite, because that dish has so many happy memories. The fillets freeze very well also. I still have some in the freezer from last summer.
Just remember bluefish has a strong fishy taste to it that some people don't like.

I personally have trouble eating fish that is too dry...but Rich's recipe for wrapping the fish in foil w/lemon juice and thyme sounds good...and it can be backed that way too.  It holds in the moisture and keeps the fish from drying out.
