I went to the Farmer's Market today and got a whole bunch of fresh veggies, so I decided I was going to make something tonight that I could put them all in. Here goes...warning, it's a little spicy. 1 lb ground turkey meat 2 medium tomatoes, seeded and chopped however you like (I did big chunks) 1 medium zucchini, diced 1 medium jalapeno or 2 small, seeded and diced 1 regular banana pepper, seeded and diced 1 medium yellow squash, diced 1 small can mushrooms, drained 1 can cannelini (sp?) beans, drained 1 can navy beans, partially drained 1 can Rotel, drained Chili powder Seasoned Salt Spice and Herb mix from the same brand that makes the really good creole spice Salt Pepper Olive Oil, or your favorite Brown the turkey meat first seasoning with chili powder, spices and herbs, salt, pepper, and seasoned salt then set aside in separate dish. Then in the same pan coat the bottom in the oil. Put your zucchini, squash, and both peppers in the pan, add salt and pepper, saute until tender. When it's fork tender, add in meat, beans, mushrooms, Rotel, and tomatoes. Add more chili powder to this and stir it all together. Let it simmer for a few minutes until the liquid has  been mostly evaporated, spoon into bowl and enjoy!!!

This sounds so good. I am going to try it. Thanks for sharing. I love to sit and think up new ways to fix things. It beats the same old stuff all the time. Sometimes hubby likes me great thought up recipes and sometimes he just nicely asks me not to fix that again. At least he is nice about it! lol

I'm usually really good at names for things.....This one has me stumped....Maybe  Michelle's Veggie Extravaganza! It is an amazing idea....You cook like me...I create something from nothing and love doing it!! Enjoy the talent girl!!! It sounds wonderful!! I can't wait to try it!  Sherry
