Hello everyone
I'm going to a pool party on Saturday and need to bring an appetizer. Any suggestions?
I do have a good recipe for marinated mushrooms, I could bring those in a nice glass bowl and some toothpicks, but I'm thinking that looks kind of cheap.
So I'm open for ideas.

Thanks!
Rich

Buffalo Chicken Dip

2 8 oz. packages fat free cream cheese, at room temperature 1 cup Frank's Red Hot Sauce 1 cup low fat shredded cheddar or colby cheese 2 10-11 oz cans of shredded chicken Preheat oven to 350. Put the cream cheese in the bottom of a 9 inch deep dish pie plate or other oven-proof dish (I make it in a 9 inch round Pampered Chef stoneware dish). Place in oven for a few minutes until it starts to melt.  Mix in other ingredients, reserving 1/4 c of the shredded cheese to sprinkle on the top. Bake in oven for 20 mins or until the mixture is warm and bubbly.

_________________________________________ Sausage Balls 1 small onion chopped 1 small green bell pepper chopped 1 small red bell pepper chopped 1 pound hot owen sausage(you can use reg. sausage if you want, the Hot sausage really honestly is not hot, just adds more flavor) 3 cups of bisquick mix ( I use the light) 1/3 cup milk 2 cups of cheddar cheese, shredded Mix everything in a bowl Heat over at 350 and bake for 20-25 mins. Makes between 30-35 balls.... You can keep then in an air tight container in the fridge.....they are even good cold...LOL We re-heat in microwave for about 30 sec.

Cheese Ball

2 jars dried beef, chopped 2 cream cheese, at room temp (I used 1 1/3 less fat & 1 FF) 4-5green onion, chopped fine 3 generous shakes of Worcestershire sauce garlic powder to taste 1/4 - 1/2 cup chopped pecans Mix all together, form into a ball. Roll in chopped pecans and let set several hours or over night. This is soooo good!! I had eaten before but it had been a long time. I hope you try it, it really is good. The dried beef has 8 proteins and 1.5 g for 7 slices.

Pudding Dessert

I just did a no bake cake for a church party - It got rave reviews.  Use 3 different flavors of s/f pudding - I used choc, white choc, and butterscotch.  Use ¼ less cup of milk per pudding. Line dish with a layer of graham crackers - not broken up, just whole pieces, you do have to break some as to line the whole pan, then one pudidng, then graham chracker, then another pudding, then graham crackers, then the last pudding - then sprinkle top with crushed graham crackers and nut (I used pecans). refrig overnight to soften the crackers. the three divided colors looked great when served.

Cheesecake Tarts 2 blocks of low fat cream cheese, softened 1/2 cup Splenda Blend or 1 cup Splenda 2 eggs 1 tsp vanilla extract 2 tsp lemon juice SF Vanilla wafers Blend the cream cheese and sugar together, add the eggs, vanilla and lemon. Use a 12 cup muffin tin and paper liners. Place a vanilla wafer in the bottom of each liner. With a medium size cookie scoop, use 2 scoops for each. Bake at 350 for 20-25 minutes. While allowing the cups to bake and cool, take a jar of your favorite Sugar Free Jam and warm it a bit in the microwave. Then add 3 packs of Splenda. Set it aside. Once cooled the tarts sink in the middle, leaving the perfect spot for the fruit jam topping. A teaspoon full was enough to be placed in the middle of each cup. P.S. I used the Splenda Blend, so if a recipe calls for a cup of sugar, by using the blend, you only use a 1/2 cup. If you use regular Splenda, it would be a full cup.

T's Green Fluff Stuff with fruit.

1 sm. pkg. Sugar Free Lime Jello, dry. 1- 8 oz. Fat Free Cream Cheese, softened. 2- small cans of crushed pineapple in it's own juice. 1- 8 oz. container of Sugar Free Cool Whip. Mash up cream cheese with pineapple juice and all. Add dry lime jello and mix well. Then fold in the sf cool whip. You can add chopped pecans for crunch. Note that you can change the jello flavors and fruit to make it different flavors. SF orange jello and mandrin oranges. Sf strawberry jello and sliced strawberries. SF Cherry jello and no sugar cherry fie filling. I've always added the pineapple with each of the flavors. Yum.

No Bake Chocolate Peanut Butter Oatmeal Cookies                   2- Cups Splenda 1/2 Cup low-fat Margarine or butter 3- Tablespoons Cocoa Powder 1/2 Cup Milk, skim or 1% 1- teaspoon Vanilla 1/2 Cup Peanut Butter 3- Cups Oatmeal Mix and Boil first 4 ingredients for 1 minute Remove from heat add Vanilla and Peanut Butter. Stir well.  Stir in Oatmeal untill mixed well.  Drop by teaspoons full on to a cookie sheet covered with wax paper. Place in Ziploc bag and put in freezer or fridge. Just pop one out when you want a treat.

All of these recipes I have collected from OH members.  I hope you have fun and the marinated mushrooms sound really good too! Julie

I got this one in an email today...you can cut them and make appetizers.  Great on whole wheat tortillas. Pace® Triple Pepper Salsa Turkey Rolls

From: Campbell's Kitchen Prep: 10 minutes Serves: 4

Ingredients:

4 flour tortillas (10-inch), warmed 1/4 cup cream cheese, softened 1/2 lb. thinly sliced deli turkey breast 1/2 cup Pace® Triple Pepper Salsa 1 large ripe avocado, peeled, seeded and chopped (about 1 cup)

Directions:

Spread each tortilla with 1 tablespoon cream cheese.  Top each with about 4 turkey slices, 2 tablespoons salsa and 1/4 cup avocado.

Roll up the tortillas tightly, leaving the ends open.  Cut each roll in half.  Serve with additional salsa for dipping.

To make appetizer rounds: cut each rolled tortilla into 1/2-inch slices and arrange on a serving  platter.  Serve with additional salsa for dipping.

Pace® Triple Pepper Salsa Turkey Rolls  Also, you should look at Eggface's blog...she has all kinds of recipes she calls 'bites' that she uses a mini muffin tin for.  Perfect for appetizers.  Here is a link:  www.theworldaccordingtoeggface.blogspot.com
