I just made another roast in the crock pot and it was so tender and moist. I had no problem with it at all.  I took the roast and removed any visible fat. I seasoned it and put it in the crock pot with a small can of beef broth. I sliced onions thinly and added to the broth with a few peppercinis. They don't add heat but just some added flavor. I cook mine on low for 8-10 hours and it just falls apart. I tried to slice it and it just came apart. It was so flavorful and moist. So worth the wait of the cooking time.  If you try it I hope that you enjoy it. My husband just loved it.

Perhaps it was the cut of beef that was the problem. Brisket is IMHO the best cut for pot roast. Season and brown it, then slow cook with whatever fluids you normally use. My current fav is tomato soup, beef broth, red wine and a little onion powder if I can sneak it past the anti-onion police who make up my entire family

Take Care, Ellen J.... Who will not be eating (or cooking) pot roast for a while.
