Eggless Egg-Like Recipes???

Hi everyone, I'm allergic to egg whites and miss egg dishes like omelets and quiche.  Does anyone know of any egg substitutes that work well in these cases?  All of the egg substitues I'm aware of are made with egg whites.   Thanks for your help!

I've seen (and tried) a recipe that you use tofu to make 'egg salad.'  Just chop the tofu into small chunks and mix it up as if you were making egg salad...the mayo/mustard/spices...whatever you would normally put in egg salad.  It does taste a lot like the real deal...w/o the post-WLS 'ick' of eggs.  I can hardly eat eggs now because of the surgery.  It's not taste...it's something w/the texture.

Thanks!  I never thought about that, though I've made a faux tuna salad with garbanzo beans.  I'll have to give this a try.
