Olive Garden's Zuppa Toscana soup

Makes 6 servings
Couldn't get any closer to the real thing!
Ingredients
3 medium potatoes
1/2 tsp salt
1 clove garlic, chopped
1/2 c onion, chopped
12 oz italian sausage
1/2 c spinach, chopped
1 tsp italian seasoning
2 chicken bouillon cubes
4 cups milk, 2 %
2 T cornstarch, dissolved
Directions
Brown onion and garlic, add sausage and coo****il done, but not crispy. In stock pot, cook potatoes in sal****er, then add spinach and italian seasoning. When sausage is done, add to potatoes and continue to boil until potatoes are fork-tender.
Drain off about half the water and add about 4 cups of milk, and the bouillon cubes. When they are dissolved, add the dissolved cornstarch and coo****il thickened.
ONE QUESTION, CAN I SUBSTITUTE CORNSTARCH WITH ANYTHING TO REDUCE CARBS? OR IS IT WORTH THE TROUBLE????
