Olive Garden's Zuppa Toscana soup found this on calorie counter....Submitted by tracymiller Makes 6 servings Couldn't get any closer to the real thing! Ingredients 3 medium potatoes 1/2 tsp salt 1 clove garlic, chopped 1/2 c onion, chopped 12 oz italian sausage 1/2 c spinach, chopped 1 tsp italian seasoning 2 chicken bouillon cubes 4 cups milk, 2 % 2 T cornstarch, dissolved Directions Brown onion and garlic, add sausage and coo****il done, but not crispy. In stock pot, cook potatoes in sal****er, then add spinach and italian seasoning. When sausage is done, add to potatoes and continue to boil until potatoes are fork-tender. Drain off about half the water and add about 4 cups of milk, and the bouillon cubes. When they are dissolved, add the dissolved cornstarch and coo****il thickened. ONE QUESTION, CAN I SUBSTITUTE CORNSTARCH WITH ANYTHING TO REDUCE CARBS? OR IS IT WORTH THE TROUBLE????

You could use flour but that is not supposed to be good for you! The small amount of carbs in cornstarch it probably won't be worth it! Thanks for the recipe I am going to try it tonight! I love that soup!
