Black Bean Ragout

I have had white bean ragout many times but today I made a mexican version to go with my taco chicken leftovers from last night. (I roasted the chicken thighs with a little Chipotle Taco seasoning mix on it). I had some of that seasoning left & my can of black beans was staring me in the face!! So here's what I came up with. Sautee 1 clove of minced garlic in a little olive oil (I spray the pan with my mister). Added minced red, yellow & orange bell peppers (about 1/4c). After they softened a little I added some chopped scallions & the can of drained black beans. I then added about 1-2tbs of the chipotle taco seasoning mix & 1 tbs chili powder to the beans & let it simmer for a little bit. Then I added one can of diced fire roasted tomatoes - drained well. Let that all simmer togther until thickened a bit & then I stirred in about 1 tbs chopped fresh cilantro! I had it with my leftover chicken & 1 baby red potato that was also roasted with the chicken last night!! Lots of protein & very YUMMY!!! I think it's gonna be good as a light lunch tomorrow all by itself!! Enjoy!! Cece
