Rhubarb Protein Smoothie
I went to make my fruit/protein smoothie last night and we were out of fruit! This meant I had to improvise, luckily I had some Rhubarb Sauce around.
Rhubarb Sauce
Approx 3 pounds Rhubarb, Chopped
1 packet Stawberry Sugar Free Jello
Splenda (1 cup approx)
Put the Rhubarb in a pot with a little (1/4 cup) water and cook it until mushy. Add jello and Splenda and let cool. Makes about 1 quart of sauce. Other than the one Jello packet, I made mine totally without measurements and all was done "to taste"
So, now I have sauce but no other fruit and need a protein supplement. So I put the following in a blender:
Rhubarb Smoothie
3/4 cup Rhubarb Sauce
1 scoop GNC Vanilla
1/4 cup fat free yogurt
3/4 cup Light Soy Milk (just me, use any milk really)
1 cup crushed ice
It was really good, a nice creamy consistency with a little tang from the Rhubarb.
