Crockpot Chicken Recipe

I've made this dish twice, once with fennel, once without, and it was awesome both ways.  Very moist, which is the only way I can eat chicken now.  I use chicken thighs because I just can't do breasts any more, but it would probably be good made with breasts, too. INDONESIAN COCONUT CHICKEN 2 cloves garlic, minced 1/2 tsp salt 1/4 tsp pepper 2 tsp. cumin 2 tsp coriander 1/2 tsp fennel 1/2 tsp cinnamon 1 c. light coconut milk 1 c. water 1 tbl lemon juice 6 chicken thighs (without skin) Put the chicken in the crockpot.  Mix everything but the chicken togethe and pour over the chicken.  Cook on low 6-8 hours or high 3-4 hours.
