noodless lasagna or Low carb Veggie lasagna
I did a noodless lasagna with ricotta cheese, italian seasoning, and garlic layerred with ground turkey and then a sauce (either classico, homeade, or dieced tomatoed mixed with onions, olives, and garlic simmered) Thatw as awesome
I also used low carb - whole wheat noodles and layered them with the diced tomatoe sauce, zuchini and diced peppers, the ricotta with an egg as well, and then broccoli with a bit of fat free mozz on top! so so good!!!

Gina - that sounds good!! I also made one with roasted eggplant slices in place of the noodles & then did the traditional ricotta & meat/sausage layers!! I used ground turkey & italian turkey sausage & it was fabulous!!! I didn't miss the noodles at all!! If you don't like eggplant try zucchini slices!!

We use boiled cabbage leaves instead of noodles to cut carbs.
My wife makes it with cooked cabbage leaves and browned hamburger. We like it with Prego with sausage if you can get it, and cottage cheese and american cheese. Season with Italian seasoning. Minced onion if you like.

New info: Now 130 pounds lost and 2 years out. Weight around 245 lbs.
My loving wife, Robin had DS Sept. 30, 2008 and has lost about 130 lbs. also. Hey, thats 260 lbs. lost together. We lost a person in there somewhere.
