I made a taco meatlof!!!

I am almost 3 years post op - had gained some weight due to some reasons listed on my profile - but now in taken it off I've been eating 1000-1200 calories a day and only complex carbs with no simples carbs! I had made so many things with ground TURKEY from turkey burgers, to meatballs and everything else you'd use beef with - this time I had some leftover and needed to use it but was at a loss as to what to do - so here's what I did and it was AWESOME! 1/2 of the lean ground turkey "log" you buy at walmart or wherever you shop Mix this with: a touch of tabasco sauce, half of the cheesy taco seasoning, 1 egg, salt and pepper Lay it out thin on wax paper Spread 2 teaspoons of tostitoes Southwest Ranch dip on the entire thing layer fat free cheddar cheese on top of that Now using the wax paper roll into a meatloaf Bake at 350 for about a half hour until meat is cooked through I served this with a salad of just iceberg, tomatoes, and cucumbers and on top of the loaf I used a tiny bit of taco sause, salsa, and fat free sour cream! Made for a GOOD SIZE meal of about 300-4000 calories - but you can freeze what you dont use or serve enough people with this - its a great "new" thing when you're bored. The way the dip and cheese melt inside of the loaf is such a treat!

I and my family love meatloaf and make it often. But this is a nice change. I never thought of making one like it. I'll will try it for sure. Thanks for sharing.
