It's Rhubarb season (not a dessert)
It is Rhubarb season here in Wisconsin and I was looking for something to make that wasn't a dessert. Sadly, 90% of everything you see is Rhubarb pie, cake, crumble, et al. So when Cooking Light had a recipe for Rhubarb Lentil Soup I had to try it.
My wife and I give it two thumbs up! The recipe has lots of fiber, is low in calories, and (being all vegetable) you even get some good carbs. I tweaked the recipe by adding a little Tsardust from Penzeys. The Rhubarb and use of sour cream (Creme Fraiche) and Dill seemed very Siberian to me.
