Oatmeal Minute Muffin

Oatmeal Minute Muffin
Makes 1 serving

Ingredients
1/4 cup oatmeal, whiz in blender to turn into flour
1/2 tsp. baking powder
1 tbsp. Splenda Granular
1 tsp. cinnamon
1/4 cup Egg Beaters, or 1 large egg

Directions

(The recipe I got called for using flax meal instead of oatmeal, and mixing in a Magic Bullet for about 5 seconds until well blended. Then microwaving for 1 minute right in the Magic Bullet cup.)

Here's what I did. Whiz oatmeal in blender or food processor to make into flour.

Put all ingredients in a microwavable coffee cup and stir until well blended.

Microwave for 1 minute and enjoy!

You could also add 2 Tbsp. of cream cheese to the mixture. It manages to stay in the muffin and ooze out when you eat it! (Not included in nutrition listing.)

While warm, you could spread with some butter, cream cheese or SF jelly. (Not included in nutrition listing.)

Yes, just put all ingredients in the Magic Bullet, mix well, and put the cup in the microwave and cook on high for one minute. Hope you like it.

I made these this morning for my hubby and I. Loved them, added some s/f butter flavored syrup when it was done, and yum yum.. The best part is they were quick and easy, and it only took one to satisfy me.  Tomorrow Im gonna add some cream cheese and chopped pecans. I also blended mine in the bullet, but put it in a microwave coffee cup to cook, because it was all over the sides of the bullet cup, so I just scraped it into a coffee cup, worked great!!!  Thanks so much for sharing!! Sure, you could use instant oatmeal if you want.  I buy the big box of the store brand oven toasted rolled oats, and that's what I use.  I put it in the blender or food processor until it gets pretty uniformly cut up and looks a little more like flour.  It's less expensive than the instant, and doesn't have anything in it but rolled oats.  The instant has sugar and some other stuff, but I don't think it adds so much of anything that you couldn't substitute instant.  It's fun to experiment, and try different flavors and ingredients.  One lady said she'd try putting in some banana and nuts.  Another lady let hers cool, sliced it, then toasted the slices and ate it with margarine or sugar free preserves.  She said she was going to try using it toasted as a bun for a sandwich.  You could also try 1/2 oatmeal and 1/2 milled flax seed.  Or put in some sugar free pudding mix for flavor.  I mixed a little Splenda in a couple tablespoons of cream cheese and dropped that in the cup after mixing the rest of the ingredients, to add a little protein.  It was messy, but tasted great.  Well, you get the idea.  Experiment and have fun!
