Mix mayo with parm cheese and pepper. Add dill if you wish. Slather is on the fish and bake.  The mayo keeps it real moist and the parm adds protein and flavor!

I'm not a huge fish with cheese lover but I did do the mayo and parm on top one and it was quite tasty.  This one is a *****eesier but it does look interesting.
BAKED HALIBUT WITH CHEESE SAUCE  

 

2 halibut fillets (1 1/2 lbs.) 1/2 tsp. butter 1/4 lb. grated Cheddar cheese 1 egg, well beaten 1 1/2 tsp. salt, divided 1/4 tsp. pepper, divided 1/4 tsp. dry mustard 1 c. milk 4 sprigs parsley

 

Put halibut fillets in greased baking pan. Sprinkle with 1 teaspoon of the salt, 1/8 teaspoon pepper, and 1/2 teaspoon melted butter. Bake in very hot 450 degree oven until fish can be flaked with a fork. Mix grated cheese, beaten egg, dry mustard, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Scald milk and slowly stir it into cheese mixture. Then cook this slowly in double boiler until smooth, thick sauce is made. Put fish on warm platter, pour on cheese sauce and garnish with parsley. Serve immediately. Serves 4.

mmmmmmmmmmm.....halibut olympia!! place 2-4 filets in a pam sprayed pan sprinkle some onions around the bottom of pan tbl of lemon juice  1 tbl sour cream (fat free, low fat however you want) on each filet 1 tbl mayo on top of sour cream 2 c shredded monteray jack cheese over top mix one pack of stove top stuff for chicken and put it on the very top of the whole thing cover with foil  bake at 375  til opaque and flake nicely uncover to brown the stuffing a little and eat it up!!
