Have you been over to sparkrecipes.com?  It is the companion site to sparkpeople.com and I use it every day to find diet-friendly recipes.  For myself, I always look for a whole wheat, low fat and sugar-replaceable recipe.  Nice thing about their recipes is you can 'shop' each one by the nutritional info.  Hope you find one you  like! Hi Molly, I have found one on Spark people that I am going to try after a little tweaking. I'm going to use whole wheat and soy flour and some splenda and applesauce for the sweetner and the oil. I thought of them after I had posted. After I try it, if I like it I will post the recipe I used. Thank you for taking the time to reply to this post. vickie

Let me know how your banana nut bread recipe turns out!!! If if turns out well I would love to hear how you tweaked it (I'm not to sure how to convert applesauce instead of oil), because I would loooove some banana nut bread right now =)

Hey Alissa, I finally made the banana nut bread today. It was pretty good if I do say so myself. The recipe is as follows: 1 cup whole wheat flour 1/2 cup soy flour 1-1/4 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon cinnamon 3/4 cup splenda (I used Altern the Wal-mart brand) 1 egg beaten 1 cup mashed banana 1/4 cup unsweetened applesauce 1/2 cup chopped walnuts Heat oven to 350 degrees. Spray 8 inch loaf pan with Pam or other nonstick spray. Stir together the flour, baking powder, baking soda, cinnamon and splenda. Add the mashed banana, egg, applesauce, and walnuts. Stir until blended. The batter wil be stiff. Pour into loaf pan. Bake between 30 and 40 minutes or until a wooden pick comes out clean when inserted into center of loaf. oh wow that sounds realllly good!!! Thank you so much for the recipe! I have never been good at figuring out how much applesauce to use vs. oil. This really makes it so easy. I can't wait til I can bake this!!
