That's the same recipe I use but I use egg beaters instead of eggs, I don't put the cookie/crust, and instead I put them in mini-muffin tins (sprayed with cooking spray). 350 degrees for about 10-12 min. Put them in the freezer and they are a nice little treat at about 50 cals per mini-muffin!

This is a recipe I have been making like wildfire the last few weeks. Soooo easy!!
Crust-use SF vanilla wafers and 3 Tbsp melted butter
Crush vanilla wafers and mix w/melted butter. Put in the bottom and sides of 8 inch pie pan to make crust. Bake at 350 for 5-7 minutes. Remove from oven to cool.
Filling--8 oz reduced fat cream cheese, 1/3 cup splenda granular, 8 oz tub of Cool Whip (can use Sugar Free, or use Strawberry flavored or chocolate flavor depending on which you prefer)
Mix cream cheese and splenda together till combined well. Mix in cool whip and place in crust. This sets up really fast due to the cream cheese. I used the chocolate and placed whole pecans on top and also lined the crust w/them for extra flavor and crunch. Made the strawberry one today for sisters birthday, lined the bottom crust w/fresh strawberry slices, the placed them around the edge of the pie. If you want the old fashioned one w/pie filling on top, use the regular flavored cool whip and top it w/no sugar added pie filling.
This takes like 5 minutes to put together and it is ready to eat after being refrigerated for just 10 minutes. Hope this helps!!
Hugs,
Rhonda
