SF Cheesecake???????

I saw somewhere on this website a SF cheesecake recipe. It used SF cookies as the crust and you put them into muffin cups. Does anyone have this recipe????? Thanx in advance for your help.

12 - Murray's Sugar Free Vanilla Wafers
2 - 8 oz packages of reduced fat cream cheese, room temp.
2 - eggs
1 tsp vanilla *
1/2 cup Splenda

Take the vanilla wafers and place 1 in each cupcake liner in a muffin pan. Set aside.

Take the cream cheese and beat until whipped. Add each egg seperately, mix thouroughly before adding the second egg. Add vanilla, mix, add splenda and mix well.

Fill muffin liner 2/3 full with the batter.

Bake at 350 degree oven for approx 30 minutes. Remove from oven and cool.

That's the same recipe I use but I use egg beaters instead of eggs, I don't put the cookie/crust, and instead I put them in mini-muffin tins (sprayed with cooking spray).  350 degrees for about 10-12 min.  Put them in the freezer and they are a nice little treat at about 50 cals per mini-muffin!

This is a recipe I have been making like wildfire the last few weeks.  Soooo easy!! Crust-use SF vanilla wafers and 3 Tbsp melted butter Crush vanilla wafers and mix w/melted butter.  Put in the bottom and sides of 8 inch pie pan to make crust.  Bake at 350 for 5-7 minutes.  Remove from oven to cool. Filling--8 oz reduced fat cream cheese, 1/3 cup splenda granular, 8 oz tub of Cool Whip  (can use Sugar Free, or use Strawberry flavored or chocolate flavor depending on which you prefer) Mix cream cheese and splenda together till combined well.  Mix in cool whip and place in crust.  This sets up really fast due to the cream cheese.  I used the chocolate and placed whole pecans on top and also lined the crust w/them for extra flavor and crunch.  Made the strawberry one today for sisters birthday, lined the bottom crust w/fresh strawberry slices, the placed them around the edge of the pie.  If you want the old fashioned one w/pie filling on top, use the regular flavored cool whip and top it w/no sugar added pie filling.   This takes like 5 minutes to put together and it is ready to eat after being refrigerated for just 10 minutes.  Hope this helps!!
