Breadless Breakfast Cass

I am not good with breakfast, but this makes it so much easier to get something good for you in.  Hope you enjoy it. Breadless breakfast casserole

Ingredients 12 ounces shredded mozzarella cheese 12 ounces shredded colby-monterey jack cheese 6 ounces sliced mushrooms , drained 1/3 cup chopped green onions 1/2 medium red bell pepper , chopped 1/4 cup margarine or butter , melted 8 ounces julienned ham or sausage , cooked and crumbled 1/2 cup all-purpose flour 1 3/4 cups milk 2 tablespoons fresh parsley , chopped 8 eggs , beaten (you can use Egg substitue accordingly) Directions Pre-heat oven to 350. Place cheese in a large bowl and toss to combine. Place half of the cheese blend in the bottom of a 13x9 casserole and spread evenly. In a medium skillet, melt butter, add mushrooms, green onions, and peppers cooking until onion and pepper are tender. Arrange vegetables over cheese evenly. Arrange ham or sausage over vegetables evenly. Add remaining cheese evenly over meat. Lightly spoon flour into measuring cup; level off. in a large bowl using wire whisk, blend flour, milk, parsley, and eggs; pour over layers in dish. Bake at 350 for 45 minutes or until set and lightly brown. Let stand for 10 minutes (to let egg and cheese set). Cut into squares.   NOTE: To make ahead, complete recipe upto adding Custard mixture. Stop after topping with last half of cheese. Cover and place in refrigerator over night. Next morning prepare custard and bake accordingly.   Nutrition Facts  Serving Size 1 (176g)

mmmm, that sounds good, I would so make that if hubby were home.  But alas it is just me and my 4 year old and we would have to waste like 3/4 of the recipe.  I could cut it down but that is no fun.  Thank you for posting this, it is very much like a crustless Quiche (sp) I am having a rough time spelling today! I understand I am not a breakfast food eater at all, I wonder if freezing some of this would work.  Well, enjoy what you can and have a nice one. Marylin

I've made a very similar recipe, and cut into the serving sizes and frreze it.  I just grab and go , and when I get to work, microwave it on my break.....  it's great, and the high protein keeps you filled all morning!!!  Mary C

You know I never thought of freezing it before but I don't think it would matter much with me cause breakfast just don't sit well with me morning or night. Marylin
