Tuna Not Noodle Casserole

In my family we never really made it with a recipe, just a lot of fatty foods and sodium. It was usually topped with potato chips...probably about four day's worth of calories for me now. So I wanted a substitute and developed this. It is creamy and satisfying but I bet I'll be very thirsty the rest of the night from the sodium! I used cheese flavoured oriental rice crackers and parmesan for the topping but you could leave those off if you don't like yours crispy on top. When I made it in pre-op days I'd use a pound of cheddar, real sour cream and made my own butter-based white sauce. This will do just nicely for me instead! And no noodles...cauliflower! Molly

Thanks Molly!  Sounds great and I have been craving tuna casserole.  DH has been, too, so we'll be trying this.  Might let him have a few noodles in his.
