My new favorite chicken dish...

I came up with a great new recipe the other night & wanted to share... The amounts are for 1 serving just multiply accordingly... Chicken Breast Cutlet (flatten a little more to ease rolling) 1 slice Smoked Provolone Cheese 1 slice Prosciutto 3 or 4 Asparagus Spears depending on thickness (trim off tough ends)  Season the chicken on both sides with black pepper, onion & garlic powders & poultry seasoning - all to taste. Layer the cheese, Prosciutto & asparagus spears on top of chicken & roll it up (it was actually more like folding it in thirds but it worked!)  Secure with toothpicks (I used 2). Sautee in pan with about 1/2 tbs of roasted garlic olive oil (that's what I had handy, regular olive oil or even Pam spray would work too).  Brown all sides then finish cooking in the oven at 350 until the chicken is no longer pink & the asparagus is tender. I made 3 of these at one time & actually had some leftover asparagus which I threw in the pan with the chicken. The spears turned out wonderful when they were roasted & I had the extra veggies with my dinner!! This is definitely a new staple for me!! I may use it the next time I have company over for dinner!! THis looked like a great recipe - to try in a couple of months!! I am enjoying the journey soooo much - I have lost a total of 49.4lbs since January 5th.

How amazing - must have been meant for me to try this tonight - I just happened to pick up chicken breasts, provolone cheese and asparagus at the store today, saw this and had to try it.  Had proscuitto from a little deli tray I was supposed to take to a party Saturday night, but ended up not going.  This just became my new favorite chicken recipe, too!

Isn't it fabulous? It reheats well too!!! Did you try roasting a few extra asparagus spears with it? YUM!!!  I am glad you enjoyed it!! My next experiment will be with chicken, feta, spinach & maybe artichoke hearts... I am in the mood for greek flavors!!! If it comes out good I'll share that one too!!! Cece

Yeah, I roasted a bunch of asparagus spears to keep some in the fridge for snacks.  Funny what my snacks consist of nowadays! Ooh, yeah!  Share the next creation, too!  Just the ingredients sound yummy!  I'm having some dehydration issues that worsened over the weekend, so my doc's got me back on full liquids for 2 weeks, then pureed for 2 weeks, then food again, so I'll need some yummy things like these to look forward to & get me through this boring food stages again!

I am so sorry about the dehydration - that sucks!! I hope you're feeling better soon!!! I just made Shelly's Artichoke Florentine Bites last night - "Greeked" them up actually so I have feta, spinach & artichokes left!! I will be thawing the chicken out & look for the recipe this weekend!!! I can taste them now!!! Cece
