My favorite Chicken Soup
This is great for cold and flu season...or just because...
Lori's Chicken Soup
1 whole chicken
2-3 boxes low fat/low sodium chicken broth (enough to cover bird completely, add water if needed)
3 tbsp minced garlic
1 med onion
5-6 stalks celery chopped
5-6 carrots sliced
6 cups fresh organic spinach
2 bay leaves
white pepper to taste
place all ingredients except spinach into stock pot and simmer over low heat until chicken falls off of bones, remove skin and bones, skim fat from surface, add spinach and simmer for about 20 mins longer then serve.
According to The Daily Plate each serving contains 90 cals and 1.5 grams fat
