I always make this one and it's a big hit. I lived on this for the pureed stage and never got bored of it.
BLACK BEAN SOUP(Makes 12 cups pureed)
3- 19 oz can black beans, drained
1 tbsp oil
3 cloves minced garlic
2 onions, chopped
2 stalks celery, chopped
2 tsp chili powder
2 tsp chopped fresh or pickled jalepeno peppers
1 ½ tsp dried oregano
1 tsp ground cumin
6 cups chicken stock
1 can stewed tomatoes 14 oz can
¾ salt
¼ tsp pepper
4 tsp lime juice
Sautee garlic, onions and celery in the oil until transluscent. Add the chicken stock, the spices and the beans. Boil gently for 20 mins. Add the tomatoes and gently boil another 10 mins. Add the lime juice just before serving. Puree and serve with a dollop of fat free sour cream. Freezes well after it’s been pureed as well.
