Salmon Cakes? Substitute for Saltines?

My Dad used to make Salmon cakes that were just Salmon from the can, eggs, saltines and spices. Looking for a lower carb alternative for the saltines. Any suggestions? I'm wondering If I can use soy crisps... I may just try Salmon, eggs, and pureed onion and red pepper. I wouldn't mind the crackers, but my girlfriend is still fairly sensitive to carbs. Thanks for your help guys!

You can use pork rinds...has your GF tried the wheat saltines? I don't do well on wht products but do well with whole wheats/grains.

Can relate to your girlfriend as I'm also very carb sensitive. GG Scandinavian Bran Crispbread (one slice is 3g carb of which is 3g fiber). or Wasa Fiber Crispbread (one slice is 8g carb with 2g fiber) Just put them in a food processor and you're good to go. Have a great dinner!

Do you "fry" in a little bit of Pam cooking spray?

when I was doing adkin's I used dehydrated onion and that absorbed the extra juice and helped them stick together
