BANANA NUT PROTEIN MUFFINS 1 ½ Cup Flour ¼ Cup Splenda 2 Tsp Baking Powder ½ Tsp Baking Soda ½ Tsp Salt ½ Tsp Cinnamon 2 Egg Whites 3 Banana's (ripe & mashed) 1/3 Cup Skim Milk (I use Lactaid Fat Free Milk) 1-Cup Applesauce (Sugar Free) 4 Scoops Protein Powder ( I use Vanilla Whey Protein ) 1 Cup Walnuts (chopped) Bake at 400 degrees. Grease muffin tins with Pam spray. Combine flour, Splenda, baking powder, baking soda, salt & cinnamon and mix together. In a bowl, beat egg whites with a wisk or fork. Stir in mashed banana, applesauce, nuts and milk. Add flour mixture and mix together. Spoon into muffin tins. Bake for 20-25 minutes. Stick a toothpick in the center of muffin to be sure cooked thru. Cool in pan for 5 minutes then remove and cool on a wire rack.

This makes 12-15 depending on the size tins that you use... I get 14 when I make them... I freeze them and warm them in the morning sometimes I smear a little peanut butter on them...

Hi That sounds yummy.I am 3 weeks out now from surgery,doing good,Iwas wondering if I can have flour or if it is too early on for me to be making a recipe like this thanks Kim e

Hi Kim, I know for me I wasn't cleared to try anything until after 6 weeks... Also you can use whole wheat flour when you make these too... (that's what I use and I forgot to change that part) they are a bit dense even at 4 months out I have to chew them very well. 1 muffin is very filling... I hope you like them... Jenn
