Oat Cookies

I have really been wanting to bake oatmeal cookies and am wondering if anyone has a recipe for an oatmeal (or multigrain) cookie that uses splenda (or other sweetener) and maybe protein powder and dried fruit. If I can make the cookie a "little" healthier then maybe I wouldn't feel too guilty about baking and eating them once in a while. Thanks! posprudence

Hi there...I have made these many times and my kids like them as well....I don't have exact measurements...just 'wing it'..........................in bowl wisk two eggs (whites if you want fewer fat/cals)...to it add about 1/4 to 1/2 cup of oatmeal....add a pinch of cinnamon and nutmeg...also about a tablespoon or a wee bit more of splenda....mix until mixture looks 'dry and crumbly' put bowl into microwave until mixture looks as though it has 'set'............I also used unsweetened cocoa powder instead of the cinnamon and nutmeg and they are awesome.....if you are a stickler for texture, you can spray a pan and either bake or fry them...(I hate to use the word 'fry' because it is related to unhealthy food...but if you use a bit of Pam in the bottom of the pan, then it is fine)..................I know the measurements weren't much help but I hope they work out well for you!
