Beat in egg and extracts. Combine flour, baking powder and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for one hour. On a floured surface, roll dough into a 13-inch circle. Transfer to an ungreased 12-inch pizza pan. Build up edges slightly. Bake at 350 degrees for 18-22 minutes or until lightly browned. Cool completely. Beat cream cheese in bowl. Add in splenda and beat until smooth. Then add in cool whip, cream until very smooth. Spread over cookie crust. Add sliced strawberries and kiwis. I alternate a ring of strawberries, ring of kiwis. Other fruit such as blueberries, raspberries, madarin oranges, etc can be used. Refrigerate until ready to serve.
