Oriental Citrus Pork Roast

Oriental Citrus Pork Roast One pork butt roast or shoulder 1 small can of mandarin oranges, juice packed salt to taste 1 clove crushed garlic (more if you love garlic) 1 Tbs. grated fresh ginger or small piece of crystalized ginger, diced finely. ............................. 1 small onion diced 2 Tbs. soy sauce In crock pot, place roast, that has been seasoned with salt, crushed garlic and ginger. Rub in well. Pour can of oranges on top of roast. Cover. Cook on low heat for 6-8 hours. Remove roast and oranges (oranges should have cooked to almost a pulp) from pot and strain off drippings. Skim fat from drippings. In a wide flat sauce pan, saute' onion, more garlic and ginger if desired. Pour in roast drippings and soy sauce. Bring to a boil and reduce till thick and like a glaze. Slice or pull apart the roast, spoon glaze over the top and serve with appropriate side.
