Spanish Fritatta

I used to get this at our local breakfast spot and loved it so I've managed to come up with an adaption that is tasty. 1 egg shredded cheese (to your taste) 1 small slice cream cheese (fat-free of course) 1 oz chopped chicken Salsa or lo-carb ketchup I mix the egg with a little milk and creole seasoning plus the shredded cheese. Cook in pan omelet style. Put chicken and cream cheese on omelet and fold over (cream cheese will melt inside omelet) Top with salsa or ketchup. You'll probably need to split this but you'll have no trouble getting takers
