yummy snack or lunch
I am 7 weeks post op and have been able to tolerate crackers very well. So well that I'm sure these are pushing me WAY over on my carbs. I love tuna on crackers and cheese on crackers. Well I finally found a healthy substitute for the crackers. sliced cucumber! It's crunchy and goes great with everything that I used to eat crackers with, though I haven't tried peanut butter with it yet...
Here's a little something that I put together for lunch today, it was yummy, healthy and filling:
low fat ricotta cheese
mix in little fresh pepper and desired seasonings (I had garlic salt)
cut cucumber into small slices and either dip into cheese or spread yummy mixture on top.
