Yummy Recipe--Spinach and groundbeef casserole

SPINACH BEEF BAKE 1 pounds ground beef -very lean 1/2 cup onion, 2 3/4 ounces 1 eggs, beaten 10 ounce package frozen spinach, thawed and drained 4 ounce can mushrooms, drained 4 ounces mozzarella cheese 1/4 cup parmesan cheese, 1 ounce 1 teaspoon garlic powder Salt and pepper, to taste 1tablespoons butter, melted-I used Smart Balance and it worked fine. Brown the ground beef with the onion; drain the fat. Mix all of the ingredients, except the butter, in large casserole. Drizzle with melted butter. Bake, uncovered, at 375º 25-30 minutes. Makes 4-6servings Can be frozen This may be doubled to make enough for a crowd. I think the next time I make it I will add a little hot sauce to the egg before I pour it in. I like a little kick! Since I am single I made it in two casseroles and froze one for later.
