IN NEED OF SOME DESERT IDEAS
Hello everyone,
lately I have been craving some sf deserts. I have had some 100 claorie cookies, sf pudding.....Things like that. I would like to try a cake or something....

I made the crustless pumpkin pie off the back of the splenda brown sugar blend. It was yummy. Had it Thanksgiving with a spoon of sf cool whip. Tastes better when it was cold. I left it at my Mom's cause they loved it too.
I'm trying Susan Marie's bourbon balls this weekend with rum extract. There are some good recipe's on her site at bariatriceating.com if you like to cook.
Rice Pudding

1 small package SF vanilla instant pudding
16 oz light cottage cheese
2 snack size boxes raisins
cinnamon (to taste)
dash of nutmeg
Make pudding according to the directions on the box, adding spices before you whisk pudding. Once the pudding begins to get thick, stir in cottage cheese and raisins. Place in frig and let set for about 1 hour to blend.
Oatmeal Peanut Butter Cookies :1 cup minute oats .. 1 cup flour ... 1/2t .baking soda. 1/2 t. baking powder 1 cup Splenda ,1/2 cup sugar free maple syrup(pancake syrup) 1 1/2 t vanilla 1 egg beaten,1/2 cup peanut butter 1/2stick margerine Mix all together form into balls, Spray cookie sheet with pam flatten with fork bake 10 min at 375degrees cool in pan 1 minute remove and cool ... Chocolate No Bake Cookies .. 1stick butter 11/2 cups Splenda, 4 Tbls. Cocoa 1/2 cup skim milk Bring this to a boil ... Then add 3 cups oatmeal 1/2 cup peanut butter 1 t.vanilla mix well and roll into balls on sprayed or foil or wax lined cookie sheet put in frig to firm up Can also roll in cocoanut before they harden and it makes them so delicious but the cocoanut does add more calories as it is sweetened with sugar .Sugar Free Fudge.. .1/2 cup butter 2 oz unsweetened chocolate 1 to 1/2 cup Splenda ( to taste) 1 t vanilla 1 8oz lower fat creamcheese softened , melt butter over low heat add chocolate and melt also remove from heat stir in Splenda and vanilla and cream cheese beat till smooth spread in Sprayed 8x8 inch pan Refrigerate till firm cut in 1" squares and enjoy! Pumpkin Fluff 1 can (15oz pumpkin ..1 tub light cool whip.. 1 sugar free vanilla instant pudding a good shake or two of apple pie spice or cinnamon ,2 tbls Splenda ( if desired for sweetness) mix pumpkin pudding, spices and splenda fold in cool whip refrigerate serve with apple slices or graham crackers.. this is simply delicious Banana Bread ... 1 cup Splenda 1 stick butter ( not melted) 2 eggs beaten 11/3 cup mashed banans ( (3 large or 4 medium) 1/2t baking powder( mix with bananas) 1 1/2t.vanilla 2 tbls skim milk 1/2 cup chopped nuts ( if desired) preheat oven to 350 degrees spray 2 loaf pans well ... mix all together and divide into pans test with toothpick for doneness bake 50 minutes may also bake in muffin pans but shorter cooking time .. orange fluff 1/2 cups hop****er 2 boxes sugar free orange jello 1 pkge lower fat cream cheese 1 90z tub light cool whip dissolve jello in ho****er ad creamcheese use hand mixer do not worry about smooth texture it will be lumpy It will look curdled add 1 1/2 cups cold water and refrigerate ,,till slightly thickened .. Fold in cool whip for Strawberry Fluff use strawberry jello and 2 cups fresh or frozen strawberries thawed and drained
