I use the same starter for calm chowder as I do for cream of potato you can use it for the chicken also but could add frozen peas to the recipe if you like. I have used bacon as the starter but some of my kids don't like it so I used butter instead. Cook celery and onions and carrots in bacon fat or just butter. If you like garlic you can also add it here but be sure not to let it get to hot to burn the garlic because it will make it bitter. After they are trans I add 3-4 Tbs of flour and cook flour till it's not raw, I have steamed potatoes first if in a hurry or add raw if have time to let cook 30-45 minutes. Up to you which you want to do. I use about a pint of half and half and 1 canned milk and 1 can of water with mine but you can use 1 can of chicken broth and 2 cups of skimmed milk for more fat free, I like both ways, cook till potatoes are done if it's not thick enough for you just add cornstrach to some milk whisk to make smooth and add till you get it the thickness you want. I add calms and what other seafood I want just before potatoes are done. You can add chicken cubes when cooking the onions and stuff for the chicken soup, you can add peas with the potatoes to boil. I hope you try this and just add a little here and a little there to make it your own. Salt and pepper a couple of times,... taste as you go. I usually add a little pinch of nutmeg also, not sure why guess because Racheal Ray says so,...hehehe I also add red ground pepper and old bays if I am making chowder, it gives it a little kick with out burning all the way down. I just made a big pot of seafood chowder tonight, which I add baby calms, chopped oysters and shrimp to mine and then cooked some french bread in the oven with fresh garlic and olive oil,... they loved it. If you have any questions I will be glad to help if I can. Marylin
