I have made baked beans. I use canned great northern beans. Then add a couple slices of crisp bacon, some low carb ketchup, splenda brown sugar, onion (all these things to your taste) and then bake them until they are bubbly and thick. Some things you just have to experiment with. Good Luck.

Tooter's Baked Beans w/ Bacon By Dame Tooter 1 pound of Great Northern Beans (soaked overnigh****sp. of baking soda to reduce gas) 1 large yellow onion, cut into chunks 1 tsp. salt 1 medium yellow or white onion, minced well 1 bottle of Kraft Low-carb BBQ sauce 4 tablespoons of sugar-free honey (I've found this at Wal-Mart) OR sugar-free maple syrup - whichever I have on hand. 1 pound Bacon, fried crisp, drained well and crumbled 1 plum tomato, skinned, seeded and chopped fine Enough water to just cover the beans when stirred in with everything else. Drain the beans that have been soaking overnight and rinse. Put rinsed beans in a large stock pot and cover with fresh, cool water. Add the large yellow onion chunks and 1 tsp. salt to the water. Bring to a boil. Reduce heat to a simmer and allow beans to coo****il tender. Depending on elevation, age of beans, etc. this can take one to two hours. Drain beans. Rinse with tepid water. Pick through and remove the chunks of onion and discard. I use an old oven-safe cast iron pot to bake my beans, but you can use any heavy duty casserole dish. Add beans and remaining ingredients together in your oven-safe baking dish, stirring well. Add enough water (stirring well after each addition of water****il there is at least 1 additional inch of 'juice' over the beans. Cover tightly with foil and bake for 2 to 4 hours at 350 degrees. Remove foil and bake an additional 20 - 30 minutes, uncovered. You may always stir more water into this. I typically check it every hour and add more water as necessary.

Gosh, I am so not a cook (lol). I just buy those new sugar-free ones from B&W. They are delicious
