Pozole - Quick and Easy (Mexican style soup)

Pozole (pronounced poe-sew-lay). 3 cups (725 ml) low-sodium chicken broth 1 can (15 oz/420 g) hominy, drained and rinsed 1 can (10 oz/300 g)) tomatoes with green chilies, such as Ro-Tel, drained 6 oz. (180 g) cooked shredded chicken or turkey meat (about 1 cup) Cilantro leaves, for garnish Lime wedges, for garnish Heat chicken broth in a large saucepan over medium heat. Add hominy and tomatoes. Bring to a simmer. Add chicken and cook to heat through. Spoon into bowls and float several cilantro leaves on the top. Serve with lime wedges alongside. If you like, offer Mexican hot sauce for those who want to turn up the heat.
